Rachael Ray can't count!
After the successful Chicken Taco Soup, which was based on a Rachael Ray recipe, I decided to try out a few more of her recipes that caught my eye. Things did not go well!

My first trial was this delicious looking Soba Noodle Bowl I've been drooling over. I don't know who wrote this recipe down, but there is no way the thing is accurate. I halved all of the recipe except for the broth, added 4 more cups, and there was still hardly any liquid.

At this point I have 6 large tupperwares (about 1.5-2 servings each I would say), for *half* of a 4-serving recipe. Are you following this math? After all of that, it wasn't very good, and most of it will probably be thrown out. :(

Next we tried out Thai Shrimp with Coconut Rice. This one actually turned out very tasty, but we used 1/4 of the shrimp, added in broccoli, and split the recipe. It worked out really well. If we had followed the recipe, we would have had twice the amount of shrimp (too much!), but at least the recipe's picture looks pretty accurate.

And some jambalaya ~ not from Rachael, but a good use for the rest of the shrimp. (And there were no problems with this recipe ~ coincidence?) This recipe that had been sitting in my "try sometime" notebook for a long time now, and was so good it will be replacing the one we've used before.

The colors were so pretty in progress, but dulled by the end with the addition of rice ~

Sorry about the noodles :( It's a shame when recipes go wrong. My tofu from last week was so disappointing, so I feel you pain. Except I wasn't left with so much!

I need to try the coconut rice . . . mmmm. The sausage in your jambalaya looks so tasty. There isn't a veggie alternative that I have found that is close to that kind of sausage, but tofurky makes some decent ones.

Keep the recipes coming. I have been trying out new things a lot lately.

The rice was really good. We almost got through the whole mean without adding the other half of the toasted coconut as a garnish, so I slapped some on my remaining rice & it made it even better.

Sorry to hear about the lack of keilbasas ~ the only time I ever get it is for jambalaya. The actual recipe called for shrimp, ham & ground sausage.

We tend to try a few new recipes, then forget to for a long time. Or else we get pumped to try some new ones & run out of money & have to shop cheap ;)

I keep all of the recipes I'd like to try in one notebook, and the recipes we've tried & liked in another. I had a few more recipes that hadn't made it in the notebook yet, and Justin said we should make all three next week.

I am trying to get Josh to try new foods because there are so few things he likes. Last week I tried a few recipes and he didn't care much for any of them. I'm getting to the point where I might end up cooking for me and letting him either eat that or fend for himself. My only worry is that he will fend for himself and eat PB&J or pizza everyday!

I am a bit picky about foods, but not quite that bad! ;) Unfortunately there are a lot of fruits & vegetables I don't like, but I am working on adding in new or disliked ones. Justin will eat anything, probably because he's one of 7 kids!

Josh sounds like Justin's old roomate, who would always eat frozen pizzas or chicken nuggets. My step dad won't eat rice, pasta, soup, ground turkey, etc. He will actually eat a few different vegetables, but if he is cooking, he will just make the meat and say 'if you want a vegetable, you make it', which meant picking from a few varieties of cans (yuck). If he did make anything to go with it, it was fries or tater tots in his fryer.

Your posts always make me so hungry, especially since I have a tendency to set off my smoke alarm. :)

I did make a mean shepherds pie a few weeks ago.

They make me hungry too! I see the pictures & wish there were leftovers.
I haven't made Shepard's Pie in a long time ~ what do you put into yours?

Well I started out with an online recipe and tweaked it (I can't find the original site I used but here is a decent one. http://www.cookingforengineers.com/recipe/127/Shepherds-Pie-Cottage-Pie

but I was a lot lazier then them. I had about a pound of the leanest organic ground meat (I love this stuff it taste better and no fat draining)

I cut up about a half an onion and about a package of mushrooms to this

(brown ground meat, onions and mushrooms in skillet until they are cooked)

put in in a dish with two cans of Cambells Golden Mushroom (next time I do this I plan to use one can of Golden Mushroom and one can of Zucchini in tomatoe sauce)

I added about a cup of frozen pees (yum!)

I then added a couple slices of Colby jack cheese (I would add more next time.

I then used one tub of shed spread mashed potatoes

Then bake at 400 for about 55 minutes

This one made several days of left overs for me but it was one of the few times that I made something and had left overs that I didn't get sick of before then were gone.

I hope this helps, I highly recommend this it was yummy and really easy!

Thanks for the link & directions!
I like the idea of the golden mushroom soup. We have some recipe that calls for that, I can't think what it is, but know it is good! (Polynesian pork chops maybe?)

When I've made Shepard's Pie I use ground beef/turkey with tomato sauce, with a mix of green peas, carrots & corn I think. (Topped with potatoes of course!) I was suprised how well the flavors mixed together, it's not a combination you come across too often. But I also knew this originated as a kind of using-up-the-leftover recipes, so there are many variatiions.

I hadn't thought about adding cheese, but how can you go wrong?
It's too bad we just bought the week's groceries!
