Coconut Rice
Mmmm, this is one of my new favorites.

Coconut Rice

Adapted from a previous recipe, this is great on its own, or topped with some stir-fry.
I've been eating for lunch a lot with a little broccoli.

I've never been a fan of coconut used in desserts, but with a little rice and meat and vegetables, its a whole different world. The next step is trying out the recipe with some brown rice, but I wanted to make at least one last batch with white for the photos.

I totally tried that coconut rice soon after you posted it and it tasted yuck! Not because of your recipe, but because I am dumb and accidentally bought sweetened coconut. I've been meaning to try again but I keep forgetting to buy the right kind of coconut.

You know, the origianl recipe actually calls for sweetened coconut
(But it also tells you to preheat your oven, which you don't use at any point, so I wouldn't really trust its accuracy).

I don't know what I use ~ I didn't really realize there was a difference and have always just grabbed a bag (and I used up the bag on this, so I can't check). Next time I'll have to pay attention.

Really! Well I thought the taste would come out similar to a Thai coconut curry, just without the curry. It was just an odd combo with the sweetened. Let me know what you discover!

When I make coconut curry I add in a lot of brown sugar, I like it sweet, that is is how I've had it at Thai restaraunts. But I think Justin is used to less sweet curries, he grew up eating a lot of curry at his Indian friend's house.

I am pretty sure I am using sweetened coconut. I think I even remember seeing that on one of the bags, and thinking 'huh, I thought it was that sweet naturally'. And I saw a few places online say that you can find unsweetened coconut at natural food stores and Asian stores (we have neither) ~ since I just grabbed mine from the baking aisle I'm thinking it is sweetened.

But, you should still try it with the unsweetened kind!
I did see another recipe (on SparkRecipes) using coconut cream,
and I think the calories were about the same, just make sure to grab the low-fat kind.
